So, have been cooking my little butt off through Fuchsia’s Every Grain of Rice book.
And today I got to one of my most anticipated dishes: “Xie Laoban’s Dan Dan Noodles”
Here’s what the finished product looked like:
It was really rich and delicious. The combination of chilli oil and sesame paste and Sichuan peppers was just delicious.
The sauce coated the noodles perfectly, and it was really tasty!
The chilli oil that I used had quite a lot of black beans in there for some reason which meant that it was a bit saltier than I would have wanted. But still not bad for version 1.0!
My partner Susan wanted me to make a Radish solid so I knocked that up too. Was really quick and easy:
The radishes were really crunchy and contrasted well with the chilli oil mixture. Once again, it was a little salty, so will pull back on the soy and salt next time.
But still, a pretty great Sichuanese dinner!
I’ll definitely be making the noodles again!
